Lindsey Oelling dreamt of running her own coffee shop/bakery and has been her own sort of ‘Paper Moon,’ a childhood dream she has returned to year after year since her grandma first taught her how to roll a kolache. After years of trial and error, dreamin’ and schemin’, she finally opened the doors to this one-woman bakery on May 21st, 2022. In this world of quick access and instant gratification, plenty of things have lost their meaning, but Paper Moon strives to put the love back into food experiences using long standing family recipes and simple, wholesome ingredients.
